Fine W04 - Islay Whisky Cask Finish

Very Old Fine de Bourgogne.
Eau-de-vie made from Pinot Noir and Chardonnay wine lees. 100% Burgundy origin.

Aged for 9 years in small Burgundy oak barrels.

2nd Fill Sherry Islay Cask Finish.
Steam distillation.

• Nose: Floral, fruity, and spicy, with notes of goat cheese, apricot, pear, vanilla, pepper, and nutmeg, complemented by gentle hints of honey and raisin.
• Palate: A smooth opening with pear and citrus, evolving into notes of panettone, hazelnut, vanilla, and nutmeg.
• Finish: Rather dry, herbaceous, and slightly saline, developing into dried fruit and hazelnut notes.

Adding a splash of water enhances its vinous character and brings out pastry-like notes.
