THE TEAM AT OUR ARTISANAL DISTILLERY
The artisanal distillery Sabs by Alambic Bourguignon is a second family. A passionate and dynamic team joined Mathieu around his project that brings together heritage transmission and innovation; Paul and Mathieu are in production: distillation, breeding, blending and bottling. They are always helped in season by passionate distillers.
And nothing would be done without Luis, Nina, Amélie, Marine and Cécile in the trade and administration. And of course Obelix the springer old mascot on all. And the list is still long because there are always people around the still.

HOW ARE YOUR SPIRITS MADE ?
Our spirits are made by hand in copper and steam. We have the last mobile still in Burgundy. Our still moves to the wine villages of the Côte-d'Or to distil the materials from the winemaking process. We are committed to working with a high quality raw material from the work of renowned winemakers. The distillation is done by steam, with precise cuts for a product combining finesse and character. The spirits from the distillation are then aged in our cellars for several years, then assembled and bottled.
WHAT IS THE DIFFERENCE BETWEEN ARTISANAL BRANDY AND INDUSTRIAL BRANDY?
The artisanal distilleries produce spirits, that is to say spirits intended to be shared. Small companies often distil with small stills. Industrial distilleries work with much larger volumes of standardized products and often the distillers are helped by automation of distillation processes. The production from these distilleries is usually also intended for industrial use: pharmacy, bio carburation...
Industrial distilleries that produce alcohol for the mouth tend to use additives, sugar, caramel, flavors... to ensure a consistent taste. The artisanal distilleries value spirits with more natural processes by highlighting the raw material first.
WHY CHOOSE SAB’S ARTISANAL GIN?
Gin Sabs is close to the terroir. The signature wine brings an intense floral aroma, roundness and length in the mouth. The aromas are very expressive and complex, which allows to consume it on ice or as a cocktail.
WHAT DISTINGUISHES WINE BRANDY FROM GRAIN BRANDY?
Wine brandy is much more aromatic than grain brandy used to make whiskey. We distill the lees of Chardonnay and Pinot Noir from the most beautiful houses in Burgundy. This wine concentrate is distilled by steam, which allows us to express the essence of the terroir. The brandy of wine will be more ample and round in the mouth.
WHAT ARE THE BENEFITS OF BUYING SPIRITS FROM AN ARTISANAL DISTILLERY?
We are producers of our spirits from A to Z. Our spirits are authentic in the manufacturing process and modern in aromatic complexity. Our spirits reflect a tradition, a living heritage, values of quality and sharing responding to a desire to consume better. Sabs’s attempts to perpetuate a know-how and propose traditional French spirits.
HOW DOES THE MASTER DISTILLER ENSURE THE QUALITY OF OUR SPIRITS?
We work with a still pot and column. At the end of the still, the master distiller checks the alcohol content of the spirit and regularly smells it to extract the heart. Separating only the most aromatic eaux-de-vie, we store our white eaux-de-vie (gin, pear and apricot) in stainless steel vats for 1 year to achieve a slow reduction and round off the aromas. We put the rest of our spirits (fine and marc) in barrels.
POURQUOI NOS EAUX-DE-VIE SONT VENDUES AUX ENCHÈRES DES HOSPICES DE BEAUNE ?
These spirits are not strictly ours. We are contract distillers, that is to say, we distil for other fields. Among the estates we work with, the Hospices de Beaune, but also the house Albert Bichot, the Domain Trapet, the Domain Bruno Colin are among the most famous in Burgundy. In the context of the sale of wines from the Hospices de Beaune, we make eaux-de-vie with marc and lees on behalf of the Hospices. These spirits are then put up for sale in the final part of the auction. These auctions allow us to see the increase in value of these sleeping beauties from year to year.
WHAT MAKES OUR ARTISANAL DISTILLERY UNIQUE?
Our distillery is unique, because we want to perpetuate the tradition of mobile steamer and promote forgotten AOC including Marc and Fine de Bourgogne. For this, we source our raw material ourselves. We choose the lees and marc that we want to distil in order to have quality eaux-de-vie. We distill at the heart of the terroir. It is in our cellars that we grow and assemble our spirits to produce bottles with accurate, precise and complex aromatic expressions. Producer, bottler, we also have a hand on our marketing to ensure that it best meets our values.
HOW TO ENJOY OUR ARTISANAL SPIRITS?
All Sab’s spirits are made to be drinkable. Each of our bottles is made to be drunk on ice, in tonic or cocktail.
