 "PRESERVING THE TRADITION OF THE MOBILE BOILER"

JOB

​The profession of mobile boiler is on the way to extinction. Fifty years ago, there was a boiler per village in Burgundy. Today, we are hardly the last to carry on this tradition. 

Our distillery is based in Beaune, capital of the great wines of Burgundy. After the sale of wines, we start our winter tour that takes us from Paris l'hôpital to Pommard via Gevrey-Chambertin.

We distill the grape marc and wine lees from the most beautiful terroirs of Burgundy. We are among the last to produce the AOC Marc de Bourgogne and Fine de Bourgogne. We are living a century-old tradition that is still alive.

In the craft distillery - Sabs

TRADITION

​From always and until the 60’s, each Burgundian village had its own boiler. Those who owned orchards could thus bring their fruits and collect fruit spirits. 
The winegrowers, for their part, gave their grape marc and their wine lees in order to obtain Marc and Fine de Bourgogne.
The distiller’s job has gradually disappeared, and even more so that of a mobile boiler. 

DISTILLATION

​Rooted in ancestral processes, our distillation method is based on a still that is both precise and modern. In the way of perfumers, we use copper and steam to concentrate aromas. Our still is a mobile one, so that it can be as close to the source as possible. Each distillation is a promise of character. The distiller is a constant hand on the wheel, and is essential to the art of cutting and identity of Sab’s.

UPCYLCLING

​Our commitment is to create high quality spirits by being as virtuous as possible. We distill materials that previously gave birth to the world’s greatest wines. It is the very embodiment of the concept of upcycling. Our mission is to restore the nobility of Marc and Fine, and instill a new ethic in the spirits industry, making them more responsible and aligned with the imperatives of the future. Each drop represents not only a refined experience, but also a step forward towards more thoughtful and sustainable consumption.

TERROIR

​Our artisanal distillery is located in Beaune, capital of the great wines of Burgundy. UNESCO has classified our climates as a world heritage site. Wines from the Côte are desired all over the world. The combination of Pinot and Chardonnay + richness of the soil + exposure of the slopes make them inimitable...

ELEVAGE

​The cultivation and blending of Sabs spirits is an art that calls upon time, seasons and senses. Our eaux-de-vie are carefully grown in Burgundy wines, which contain the best wines of the region. Pampered in our cellar nestled in Beaune, in the heart of Burgundy wine, we watch over the evolution of each brandy, from the exit of the still to their bottling. Each barrel is unique and followed by the exit from the still to bottling. Each drop of our Sabs bottles is born from this know-how and has a unique identity.
