After 20 years spent serving multinationals, 12 years of expatriation that led him from Los Angeles to Casablanca, Mathieu, then Pernod’s International Director, is passionate about forgotten French spirits, Absinthe, Liqueurs et eaux de vie...
He set out on a quest for an artisanal distillery and discovered that of the Pigneret brothers in Beaune, in the heart of Burgundy.

Cécile

An engineer and passionate agronomist, Cécile took her first steps into the world of entrepreneurship by opening a beer bar in Dijon. With her insatiable curiosity, she now embarks on the captivating world of spirits. Her diverse expertise guides us into new perspectives at Sabs, where she plays a key role in our expansion into uncharted horizons.

Amélie
Brand Ambassadrice and commercial Paris region
Amélie, Mathieu’s wife, is a dynamic force in the business world. With experience as a saleswoman, event planner and talented caterer, Amélie wears several hats. However, her role as a dedicated ambassador for Sabs truly sets her apart. Amélie has a unique talent for amplifying the brand’s presence, both visually and emotionally.

Epicurean at heart, she forged her experience in catering before becoming a devoted mother. Driven by her desire to help young companies in their development, she joined our team from the beginning to take care of the administrative. Great lover of Gin, she naturally found her place in our distillery!

Originally from the Grand Est region, Gauthier grew up surrounded by vineyards and a rich winemaking heritage.
Interested in marketing and export management, he has been pursuing his studies at BSB from his first year of Bachelor’s degree through to this year in Master’s Year 2.

A true epicurean at heart, she built her experience in the restaurant industry before becoming a devoted mother.
Driven by her desire to support young businesses in their growth, she joined our team from the very beginning to manage the administrative side.
A great gin enthusiast, she naturally found her place within our distillery!

Eric and Joseph gave it to Mathieu on the day the sale was signed.
He keeps a close eye on the still, welcomes the winemakers, and is therefore an integral part of the adventure!
And also Quentin who delivers the precious grape must from the best terroirs as well as Thibault, and Jean... Clément and his team who are always of a providential help, etc.
We all want to perpetuate this ancestral tradition, to give back its letters of nobility to the Eaux-de-vie de Bourgogne: Le Marc et à la Fine, and to sublimate these exceptional products.

Originally from the Nouvelle-Aquitaine region, Alexandre has built his career around a passion for craftsmanship and local expertise.
After completing a vocational high school diploma in viticulture and oenology, followed by several professional experiences in the same field, he further refined his knowledge of wines and spirits.

The mascotte
Originally from central France, Pierre joined our team after gaining experience in the brewing world.
Today, he is training alongside us to master the subtleties of eaux-de-vie, whether it’s overseeing every stage of production or exploring new ideas.

Arnaud
Originally from central France, Pierre joined our team after gaining experience in the brewing world.
Today, he is training alongside us to master the subtleties of eaux-de-vie, whether it’s overseeing every stage of production or exploring new ideas.
Passionate about the world of bars and spirits, Arnaud refined his expertise as a bartender before running his own establishment in Lyon.
Through this experience, he developed a true product expertise and a keen eye for detail, particularly in the art of cocktail making.
This year, he joins our team as Brand Ambassador for the South-East region, from the Alps to the French Riviera, with Lyon as his base.

Sales apprentice
Originally from the Champagne region, Léo grew up surrounded by vineyards and a rich winemaking heritage.
Passionate about the world of wine and spirits, he first completed a BTS degree in viticulture. Today, as a student at INSEEC and a sales apprentice, Léo combines his technical expertise with a strong commercial mindset.

Master distiller and cellar master
Born in Beaune to a family of winegrowers from Meursault, he grew up in Paris, spent his summers in Burgundy and was always harvested at his grandfather’s house. After a few years in the corporate world, and a solid experience as a consultant, he wanted to return to his origins: his great-grandmother was a distiller...

Nina
Sales & marketing manager
Born in Burgundy, Nina has travelled to the four corners of the world and France to return to her roots. With a background in archaeology and geography, her passion for wine and spirits culture led her to join us in defending the heritage of Burgundy eaux-de-vie.

Emilien
Alternant agro
Student in Toulouse in alternance, he explores the many facets of creating a distillery with us. From distillation, to the follow-up of plans and works, he is immersed in each stage and brings us his energy for the evolution of our project of new distillery.

Boris
Distiller in training
In 2021, after a commercial career in the world of wine and spirits, Boris came to train in distillation alongside Paul and Mathieu. His distillery project, for which he trained in Burgundy, became a reality. He is now the happy owner of La distillerie des deux mers. He expatriates to the Bordeaux lands our love for wine spirits.

Brand Ambassador
Originally from Paris, he did an initial training in management and then moved to Burgundy for a master’s degree in wine and spirits trade at the BSB of Dijon. Eager to combine his love for Bourogne, his passion for spirits and his Parisian life, he joined the Sabs adventure by representing us in the capital for his final internship.

Seasonal distiller
After years of distillation in houses with different approaches, Simon knocked on our door. Free and creative spirit, he accompanies us two consecutive years during the distillation seasons of marc. Simon is now at the helm of an incredible project in Grenoble mixing distillation and third place.

"I will always remember my first day at the still: September 15, 2020, it was 35°C outside, 42°C next to the still. I had to assimilate all the gestures, all the noises, the rhythm of the machine, in a stuffy heat, charged with steam.
After an intense distillation season at the Côtes de Paul and Mathieu, Brice created the Cerès Distillery.
Far from the standardization of taste proposed by the spirits industry, Sab’s offers you to discover spirits of creation, deeply rooted in our heritage. Alive, expressive, our bottles do not seek uniformity or perfection, but beauty and exception.
