Maceration of juniper berries and 14 other aromatic plants in a grain alcohol from the lands of France. Maceration of fresh marc from grapes of Pinot Noir de Bourgogne. 3 months minimum rest in stainless steel vats. Steam distillation.
Wax headdress placed by hand.
Tasting note
For the Pinot Gin, we infused grape marc from pinot noir, the king of the Burgundy climates. These few days of infusion of the grapes have brought a real winemaker signature to this new gin, as well as a characteristic color of great red wines of Burgundy. On the palate, notes of red fruits are mixed with juniper and 14 other aromatics that make up the recipe for Gin. The infusion offers a particular grain of pinot for a terribly greedy gin in Gin Tonic...
